Classic Blueberry Buckle
Always a fan favorite, this is an easy-to-make coffee cake that is delicious any time of day! It holds up fairly well with substitutions to fit dietary restrictions. Ingredients:
- 1/4 cup softened butter
- 3/4 cup sugar
- 1 egg
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 whole milk
- 2 cups Terra Fluvia blueberries
For the topping:
- 2/3 cup sugar
- 1/2 cup all purpose flour
- 1/2 tsp ground cinnamon
- 1/3 cup cold butter, cubed
Mix the butter and sugar together until light and fluffy. Beat in the egg. Combine flour, baking powder and salt, and add to the butter/sugar/egg mixture alternately with milk, beating well after each addition. Fold in the blueberries. Pour into greased 9-in. square baking pan.
For topping: In a small bowl, combine the sugar, flour, and cinnamon. Add butter cubes until crumbly. Sprinkle over the blueberry mixture, and bake at 375° for 40-45 minutes or until a toothpick comes out clean.

Easy Blueberry Jam
No pectin is needed for this quick and easy jam recipe. You’ll end up with an amount that’ll fit nicely in a pint-sized jar, and it’ll keep for a few weeks in the refrigerator.
Ingredients:
- 3 cups Terra Fluvia blueberries
- 1 cup sugar
- 1 tablespoon lemon juice
Add all the ingredients to a saucepan, and bring to a boil. Stirring frequently, reduce the heat to medium and let it boil gently (uncovered) for about 20-25 minutes.

In order to tell if it’s done, we have used the “spoon test.” Before you start, put a couple of spoons in the freezer (I recommend one for each kid who is helping you!). When you think the jam is done, take out one of the spoons, and hold it upside down. Drop a dollop of jam onto the concave side of the cold spoon, and if the jam “gels” and doesn’t run off the side, your jam is ready!

Blueberry “ice cream”
This is a dairy-free, fruit-only version of ice cream, that actually lives up to the name! It only takes a minute to make, as long as you remember to freeze the fruit ahead of time.
Ingredients:
- Bananas, cut into small slices and frozen
- Terra Fluvia blueberries, frozen
- Vanilla extract
The amount of each ingredient depends on how many servings you want. A good rule of thumb is to use 1 banana for each person, then half that number, in cups, for blueberries, and half that number again, in teaspoons, for Vanilla. So a family of four might use 4 bananas, 2 cups of frozen blueberries, and 1/2 teaspoon of vanilla. This recipe doesn’t require exact science, by any means. If you want more berries, toss ’em in. If you really like vanilla extract, add more. You could also add a splash of coconut or almond milk if you really wanted to go for it. It’s very forgiving, and though it may seem like it will just taste like bananas, it doesn’t!
Blend all ingredients in a food processor or blender, scraping down the sides frequently. Enjoy immediately, or freeze for later.
